Reports to: All managers and trainers

Job summary: Responsible for the initial greeting and seating of guests. Answering phones, taking messages and reservations, maintaining an accurate wait if necessary, and bidding goodbye to all guests.

Essential Functions:

  • Determine proper reservations to be accepted for each shift according to standing operation procedure.
  • Take all reservation calls and record necessary information.
  • Confirm applicable reservations according to standing operating procedure.
  • Seat the restaurant in an evenly and orderly manner such that guests are distributed evenly among guests and that the dining room appears filled at all times.
  • Maintain an accurate head count of guests seated in each station.
  • Completely fill out all sections of telephone message pad and ensure correspondence to appropriate individual within 10 minutes of the call.
  • Periodically ensure the front door is wiped down and clean.
  • Maintain cleanliness and organization of host desk and waiting area throughout the shift.
  • Efficiently arrange tables appropriately for each party.
  • Manage the patio area accordingly.
  • Master the restaurant's paging system and/or headsets in addition to restaurant telephone system within 2 days.
  • Must be willing and able to meet individual restaurant requirements in the following when the restaurant is on a wait:
    o Accurately quote wait time within 5 minutes
    o Efficiently assign tables appropriate for parties being seated
    o Accurately fill out and maintain host/hostess control sheet
    o Anticipate needs of scheduled special parties
    o Communicate seating needs to service, bus and other host staff
    o Cordially inform the guest about where to wait and how wait system works
  • Showcase ability to multitask, work efficiently under pressure, and maintain calm conduct at all times.
  • Notify problems to management immediately while maintaining professional etiquette
  • Relate to guests pleasantly with good humor and effective communication.
  • Complete all side work when and as assigned.
  • Refrain from smoking for the duration of the shift.



  • Acquire and wear appropriate uniform as prescribed in the training manual
  • Ensure maintenance and cleanliness of uniform
  • Maintain a well-manicured appearance as an individual who reflects the established image of the restaurant

  • Read and be accountable for the information in the E+O employee handbook

Qualifications Standards:

Must provide a minimum of 1-year full service restaurant experience or the equivalent. Must have accurate mathematic skills. After training, must be able to pass an exam in English 90% or better in each of the following:

  • Menu and specials
  • Individual restaurant orientation material during rules and philosophies
  • Information contained in press kit on all E+O
  • Restaurant layout including table numbers and station numbers
  • Meet personal schedule requirements punctually
  • Be warm, sincere, and outgoing in personality
  • Master English language sufficiently to communicate effectively
  • Provide a persona compatible with established image of restaurant
  • Respond to the needs of difficult guests with patience and courtesy
  • Accept constructive criticism
  • Get along with co-workers
  • Stand for long periods of time while on duty
  • Move safely throughout all areas of the restaurant
  • Work amidst noise in confined crowded space
  • Work with and account for large sums of money
  • Assist busboys with the cleaning and resetting of tables
  • Move chairs, transport high chairs and/or booster seats to table when necessary
  • Work nights, weekends, and holidays

Work Rules/Unacceptable Performance

  • Theft or unauthorized removal of company property, including food or beverage.
  • Eating or drinking certain unauthorized items during shift.
  • Being under the influence of illegal drugs, alcohol, or other mood altering substances while on the job. Possession and/or distribution of illegal drugs or weapons.
  • Storage of unauthorized items in personal locker.
  • Resorting to any physical violence or harassing behavior.
  • Suggesting, hinting, conniving, or questioning guests regarding gratuity. Must notify guests of any automatic gratuity.
